Rustic is our shorthand for oils that move toward ripe fruit, savory flavors, softness and sometimes tropical notes. The exact cultivar, grower and origin will change with the oil we choose.

Rustic is intended for food that benefits from a rounder, riper olive oil: long-cooked tomatoes, beans, braises, roasted vegetables, grains and other savory dishes.

Specific pairing notes will be updated once the first oil is selected.

We will release it when we find an oil that clearly belongs in this profile and that we want on our own counter.

Rustic is the riper, rounder side of our olive oil spectrum: savory flavors, ripe fruit and sometimes tropical notes, with less emphasis on aggressively green bitterness and pungency.

The specific tasting notes will be updated when we select the first Rustic release.
