Super Lucky Black Eyed Peas

Ingredients:
2 Medium Yellow Onions, diced
½ a Bunch Celery, quartered lengthwise and diced
2 Bay Leaves
¼ Cup Good Cooking Oil (60 g)
1 TBS Smoked Paprika (7 g)
Optional:
- 2 Rounded tsp Morel Mushroom Powder (6 g)
1 TBS Shiro Miso (20 g)
Recipe:

Sort the beans, checking for any stones, remove any broken beans if you want (I leave them as they just add more body to the pot liquor.) Add salt and cover with 1” of water.
Soak for 4 hours minimum, or
Bring to a boil, and remove from heat, soak covered for one hour.
Prep your onions and celery and add to the pot with all other seasonings. Adjust water level if necessary.

Cook beans:
For pressure cooker, bring to a boil and reduce heat to low, cook for 18 minutes then release pressure manually.
Instant pot: set to pressure cook on high for 18 minutes. Let pressure release pressure manually.
Stovetop: bring to a rolling boil then reduce heat to medium low. Keep pot at an active simmer for 1 to 2 hours. Add small amounts of water as needed to keep the peas and aromatics fully submerged.
Check on peas, they should be tender but still firm and toothy. I like a rich pot liquor, and if I think it is a little bit light, I’ll return the pot to a gentle boil and stir vigorously to release some starches.
