In a fleeting window this January, when Meyer lemons reach their peak and Albert had some Taggiasca olives on his trees, we produced this small batch, citrus oil in the Аgrumаtо style. Whole lemons and late harvest olives are crushed together and milled as one, creating a bright, aromatic oil.

The Taggiasca olives, grown by Albert Katz in the Suisun Valley, bring a buttery richness and floral complexity. The Meyer lemons, sourced from a local farm just down the road, contribute their lush zest and perfume. Together, they yield an oil that is delicate yet assertive, with notes of lemon blossom, citrus rind, and a soft olive backbone.

This is a seasonal, small run oil, vibrant and ephemeral. A Perfect pairing for a summer feast!

This oil was milled in January 2025, an unusually late harvest made possible by a cool growing season and the natural ripening rhythm of both the olives and the Meyer lemons.

The Taggiasca olives, known for their gentle fruitiness and soft texture, were picked at peak ripeness from Albert Katz’s grove in the Suisun Valley. At the same time, fragrant Meyer lemons from a local partner farm were harvested at their most expressive: golden, oily, and sweetly perfumed.

Both fruits were co-milled in the Аgrumаtо style, milled together from start to finish in a single pass through the mill. The result is an oil that captures the full essence of the grove in winter, lush, aromatic, and entirely unique.

We held this oil until summer to allow its citrus and floral notes to fully develop. Now it’s ready, just in time for the dishes that need it most.

Ingredients: Olive Oil, Meyer Lemon

We use this oil to finish summer salads, drizzle over grilled asparagus or roasted artichokes, and brighten plates of burrata, melon, or ripe tomatoes. It's a secret weapon for dessert: try it over vanilla bean ice cream with a pinch of Fleur de Sel, or over lemon cake for an extra layer of depth.

For a simple vinaigrette, pair with a mild vinegar like our Late Harvest Sauvignon Blanc and just a touch of sea salt.
