Ingredients: French Green Lentil

Rinse lentils thoroughly, checking for debris. Place in a pot and cover with water by about 2 inches. Optionally, add aromatics like a bay leaf or garlic clove. Bring to a full boil, then reduce heat to a gentle simmer, partially covering the pot. Cook until tender, approximately 25 to 35 minutes. Salt to taste once lentils begin to soften. These lentils are versatile, suitable for warm dishes like soups and stews, or cold preparations such as salads with grated carrots and Dijon vinaigrette.
