An organic Hojiblanca from Grumpy Goats Farm in California's Capay Valley, selected for a softer expression of extra virgin olive oil.

Hojiblanca can be herbaceous and green without relying on sheer bitterness or pungency. This oil brings green almond, artichoke, olive, floral and nutty notes with a lighter touch that makes it especially easy to use at the table.

Delicate is one of our three loose flavor profiles for olive oil. It describes intensity, not quality. These are oils whose aromas and flavors do not need to shout to be worth paying attention to.

Use Delicate where a more forceful oil would take over: tender greens, fresh cheeses, beans, grains, eggs, fish, lighter pastas, simple vegetables and dishes built around citrus or herbs.

It is also an easy oil to pour generously. Rather than saving it for a dramatic finishing moment, let it become part of the food.

This 2025 Hojiblanca comes from Grumpy Goats Farm in Capay Valley, California, where the farm is CCOF certified organic.

We chose it for Delicate because it occupies a different part of the olive-oil spectrum than the green, forceful oils that often dominate serious tastings. It is still recognizably fresh extra virgin olive oil, just with a lighter hand.

Hojiblanca can show a distinctly green personality without relying on sheer bitterness or pungency. This organic California expression leans into green almond, artichoke and olive, with floral and nutty notes around the edges.

Delicate is our shorthand for lower intensity, not lower quality. The point is clarity and balance at a softer volume.
