How to Use:

This delicate vinegar is perfect for delicate greens, seafood, and spring vegetables. Use it in a champagne vinaigrette, drizzle over shaved fennel or asparagus, or finish a butter sauce. It also works beautifully in mignonette for oysters or in quick pickles of shallots or radishes. Its clean acidity makes it ideal for balancing richer dishes like avocado toast or smoked fish.

Tasting Notes

Lively and bright, with brisk acidity and clean minerality. Notes of green apple, citrus pith, and white flowers give it a crisp, lean profile. The finish is dry and effervescent, reminiscent of brut sparkling wine. No sweetness, no heaviness, just a pure, taut expression of high acid white wine turned vinegar.
