Pangrattato is an Italian take on seasoned breadcrumbs. It is delicious and garlicky and makes a great topping for Pesto alla Trapanese and baked Macaroni & Cheese.

Ingredients

  • 1 Cup Dried Bread Crumbs or Panko (100 g)

  • 2 Tbsp EVOO (30 g)

  • 2 Tbsp Parmesan, finely grated (15 g)

  • 2 Cloves Garlic, Minced Finely (10 g)

  • ¼ tsp Salt (1 g)

  • ¼ tsp Thyme, dried (1 g)

  • Optional: ¼ tsp Mitmita or Cayenne

Pangrattato Vegan Modification

  • Substitute 1 tsp good miso and ¼ tsp onion powder for the Parmesan. It helps to mix the seasonings into each other before adding to crumbs to prevent sticking.

Recipe

Step 1

Prepare the Breadcrumbs:

  • If using stale bread, cut it into small chunks and pulse in a food processor until the crumbs reach your desired texture—slightly coarse, but not too large.

  • If using Panko breadcrumbs, simply measure out the crumbs and place them in a large mixing bowl.

Step 2

Season the Breadcrumbs: Add the seasonings to the crumbs and toss thoroughly until evenly coated.

Step 3

Toast the Pangrattato: Spread mixture evenly on a parchment-lined baking tray. Bake for 10 minutes, stirring halfway through for even toasting, then remove from oven when golden brown and fragrant. Let cool before using.
