Аgrumаtо Style Chile Oil

We make this vibrant chile oil from our estate grown Frantoio olives, co-milled with organic Fresno and Sweet Rush chiles from Borba Farms in Aromas. Crushed together during milling, the chiles infuse their fresh, fruity heat into the oil while preserving the balance and richness of the olives.

The result is a deeply aromatic oil with a subtle heat that builds gradually to a medium intensity, and is endlessly craveable. Bright and fragrant, it carries the softness of a later harvest olive with the zing of fresh red chiles. It’s our go to for finishing roasted vegetables, drizzling over pizza, or adding a spark to anything that usually calls for chile flakes. Limited production; available while it lasts.

How to Use:

This is a finishing oil, crafted with care, intended for use right at the end of cooking to enhance flavor and aroma. Use it anywhere you’d reach for crushed red pepper, but with far more complexity and nuance. Drizzle over roasted squash, pizza, hearty greens, or anything from your grill. Swirl it into soups and grain bowls. Or, keep it simple and use it to dress warm bread with a pinch of salt.

Harvest Details

The Two Chile Аgrumаtо Oil was milled in November, using later harvest Frantoio olives that offered a rounder, more supple profile. The fruit was picked and pressed within 90 minutes, alongside sun ripened Fresno and Sweet Rush chiles from Borba Farm - a small organic farm just over the hill from us in Aromas.

This later window allowed the oil to take on a smooth, balanced character, less grassy than our early season oils, but still lively and green at its core. The chiles bring a fresh, layered heat that starts slow and builds. Because this was a tiny, experimental run, production is extremely limited. We held it back for summer, when its warmth is perfectly suited to grilled vegetables, peak tomatoes, and everything smoky and flame kissed.
