Grown in California from heirloom Sorana seedstock, these cannellini beans are renowned for their delicate, thin skins and exceptionally creamy texture when cooked. Hand-selected and cultivated with care, they reflect Rancho Gordo's commitment to preserving traditional bean varieties and sustainable farming practices. The beans' subtle flavor and smooth consistency make them a versatile ingredient in a variety of dishes.

How to Use:

To prepare Marcella Beans, rinse thoroughly and soak for 2 to 6 hours to reduce cooking time. In a large pot, sauté aromatic vegetables like onions, garlic, celery, and carrots in olive oil. Add the beans and enough water to cover them by about 2 inches. Bring to a full boil for 10 to 15 minutes, then reduce heat to a gentle simmer, partially covering the pot. Cook until tender, approximately 1 to 3 hours, salting when the beans begin to soften. These beans are excellent in salads, soups, casseroles, and as a meat alternative in various dishes.
