Late harvest Taggiasca a rare and elegant extra virgin olive oil from Suisun Valley

This special oil comes from a fleeting January harvest, when a late season window allowed the fruit to hang longer and ripen more fully. Grown by Albert Katz in the volcanic soils of the Suisun Valley and milled the same day at our press, this single variety, single day batch captures the softer, richer character of mature Taggiasca olives.

The result is a supple, floral oil with notes of ripe stone fruit, tropical blossom, and a savory, aromatic finish. It’s beautifully round and luscious a striking contrast to our greener, more pungent early harvest oils.

This is a small batch seasonal release, made from just 40 gallons. Once it’s gone, it’s gone.

How to Use:

This oil’s gentle fruit and floral complexity shine brightest in simple summer dishes.

Use it to elevate aioli or pesto, spoon over roasted peppers or grilled zucchini, or drizzle over heirloom tomatoes and burrata. It’s equally at home with fruit: try it on grilled peaches, melon with basil, or even atop a warm fruit galette.

For vinaigrettes, pair with a floral white wine vinegar and a pinch of salt - no need to overcomplicate it.

Harvest Details

The fruit for this oil was harvested in January 2025, a rare late season window that allowed the Taggiasca olives to reach full maturity on the tree.

The olives, grown in the Suisun Valley by Albert Katz, were pressed the same day at our mill. The volcanic soils of the grove and the long hang time combined to produce an oil of unusual depth and richness.

While early harvest oils tend to be grassy and pungent, this release is a study in softness, with floral aromatics, ripe tropical notes, and a gentle, rounded finish that lingers with grace.
