Crafted from late harvest Zinfandel grapes and aged slowly in oak barrels using the traditional Orleans Method, this robust vinegar offers deep berry notes, mellow acidity, and a hint of tannin. Made in small batches at Rock Hill Ranch in Suisun Valley, it’s a favorite for pan sauces, grilled vegetables, and hearty salads. Rich and nuanced, it brings the structure of red wine with the finesse of artisan fermentation.

How to Use:

With its rich berry depth and warm structure, this vinegar is excellent for reductions, pork glazes, and hearty braises. It adds complexity to lentils, mushroom ragù, and bitter greens. Use it in vinaigrettes for roasted root vegetables or warm grain salads. A small splash can balance tomato sauces or elevate barbecue marinades. It’s the ideal red wine vinegar when you want both boldness and finesse.

Tasting Notes

A rich and fruit-forward vinegar with deep notes of ripe plum, dried fig, and baking spice. The density of late harvest Zinfandel grapes shows in its mouthfeel, smooth, rounded, and slightly syrupy. Acidity is present but soft, letting the dark berry and molasses tones lead. A bit of tannin from the wood adds depth and length to the finish.
