Heirloom Beans From Rancho Gordo

Rancho Gordo's Black Garbanzo Beans, known as Ceci Neri in Italy, are heirloom legumes cultivated in California. These beans are denser than traditional garbanzos, featuring a firm texture and thick skins that are not chewy or tough. They offer an earthy, nutty flavor, making them suitable for salads, stews, and baked dishes. Popular in regions like Puglia, Italy, they are traditionally used in dishes such as zuppa di ceci neri (black chickpea soup). Rancho Gordo is dedicated to preserving traditional bean varieties and supporting sustainable agriculture.

How to Use:

Rinse and soak the black garbanzos for 6 to 8 hours to reduce cooking time. Place in a large pot, cover with fresh water, and bring to a boil. Reduce heat to a gentle simmer, partially cover, and cook until tender, approximately 1 to 3 hours. Salt when the beans begin to soften. These beans are versatile, suitable for salads, soups, stews, curries, and even hummus. Their firm texture allows them to hold up well in various dishes.
