We made this limited-release oil from Don Carlo olives grown by Albert Katz at Rock Hill Ranch in Suisun Valley. One of a newer generation of Italian cultivars developed to combine the flavor of traditional Italian olives with modern orchard performance, Don Carlo naturally produces oils rich in aromatic complexity and polyphenols.

The result is a vibrant, savory oil with notes of tomato leaf, green almond, artichoke, fresh herbs, and citrus, balanced by a clean bitterness, pleasant pepperiness, and a crisp mineral finish.

How to Use:

This is a finishing oil for people who appreciate green, savory flavors. It has enough structure to stand up to grilled vegetables, white beans, roasted potatoes, and hearty soups, while remaining balanced enough to enjoy simply with fresh bread.

We especially like it alongside tomatoes in every form, fresh tomatoes with sea salt, tomato salads, bruschetta, or a simple pasta with blistered cherry tomatoes. The tomato leaf character naturally echoes those flavors in a way that's uniquely satisfying. It also pairs beautifully with grilled fish, burrata, fresh cheeses, bitter greens, and anything featuring herbs or citrus.

If you're accustomed to intensely bitter, high polyphenol oils, you'll find this one every bit as expressive, but with greater emphasis on aroma, texture, and balance.

Harvest Details

The Don Carlo block continues to teach us something new every harvest. As one of the newer Italian cultivars being evaluated in California, each season provides a better understanding of how the variety behaves both in the orchard and in the mill.

This year's lighter crop gave us an opportunity to experiment. Rather than treating the milling process as fixed, we worked closely with the fruit throughout extraction, making thoughtful adjustments to encourage a more balanced expression of the variety while preserving the vibrant, green character that makes Don Carlo unique.

The finished oil exceeded our expectations. The intense bitterness and astringency that have traditionally defined this cultivar gave way to a more harmonious profile, revealing layers of tomato leaf, green almond, artichoke, fresh herbs, and subtle citrus over a clean, structured finish. It remains a bold oil, but one whose complexity is now every bit as memorable as its intensity.
