Heirloom Beans From Rancho Gordo

Moro Beans are heirloom legumes originating from Puebla, Mexico, with a variant featuring purple hues cultivated in Hidalgo. These beans exhibit a unique appearance, often described as a cross between black and pinto beans, and are prized for their rich, dense texture and flavorful broth. Rancho Gordo, based in Napa, California, collaborates with Mexican farmers through the Rancho Gordo-Xoxoc Project to preserve and promote these traditional varieties. The beans' velvety yet solid consistency makes them suitable for various culinary applications.

How to Use:

Rinse and inspect the beans for debris. Optional soaking for 2 to 6 hours can reduce cooking time. In a large pot, sauté aromatic vegetables like onions, garlic, celery, and carrots in olive oil. Add the beans and enough water to cover by about 2 inches. Bring to a full boil for 10 to 15 minutes, then reduce heat to a gentle simmer, partially covering the pot. Cook until tender, approximately 1 to 3 hours, salting when the beans begin to soften. These beans are versatile, suitable for soups, stews, salads, casseroles, dips, and refried preparations.
